vegan cookie without egg

for vegan type cookie .. can u advice egg replacer ingredients? not whey or like animal derivative ingredients pls..

Hello Mrs Beyhan. You may use Modified Tapioca Starch at 4 %, Whey Protein Isolate at 12 %, as well as alpha Cyclodextrin at 1% which is acting as an Emulsifier with foaming effect.

you may replace Modified starch 40% egg replacement in biscuit Modified starch is a product of Ingredion .

We use to replace the egg with combination of potato starch, lecithin, soya flour and whey powder and in some cases whey protein.  The quantity differs from product to product.  But these ingredients combination will give best results.  Nowadays Modified starch also available according to the enzyme added in the starch you can try for replacement...
