What is the best way to test products for shelf life in short time? Our product is plain flat wafer. We are currently shocking our packaged wafers in different environments several times. What is your expert opinion?
Wafers are very lean recipe with moisture content of 2-3% in the production stage itself. You need to keep it very safely with proper packing materials before its end use.
The best way to check the shelf life is accelerated humidity test. There are number of labs which will do for your product. But you need to give them what ever the packaging you are doing as finished product. Then they will study and report the product condition as per your request, either 2 months frequency up to 6months or 3months frequency up to 6 months or a year.
Accelerated study only give the packaging quality, moisture of the product, any biological degradation, and even microbiology standards also analysed.
SO best way is accelerated, stimulated humid chamber test for deciding shelf life of wafers/biscuits through out shelf life we are declaring for the product and ensure our self that the product will be good until what we declare on the label.
The accelerated shelf life test will be best option for you , i think what you are doing is familiar with this . it is a kind of temperature shock in different enviroment of a conditioner !
24 hour , %45 ERH , 24 C
24 hour , % 55 ERH , 26 C
24 hour , %65 ERH , 32 C

at the end of each day you may get many idea , further more you can prepare absorbtion isotherm graphics but believe me your observations will be enough .
