Malted milk biscuits

Please advise on the dough type of malted milk biscuit whether is soft dough or is hard dough

And beside the fat, what is the main difference between the two dough types?

Dear Mr.Walid

Malted Milk biscuits is soft dough biscuit only.  If you want to do it in Hard dough variety you can select to do as Marie variant biscuit.  But In soft dough it express well than Marie biscuits.  

The difference apart from fat the difference between hard and soft dough

In hard dough

1.  water will more per kg of wheat flour

2.  here we develop the gluten in controlled atmosphere with dough conditioner and enzyme.

3.  soft dough is molded and hard dough is cut with rotary cutter.

The malted milk is a type of biscuit, first produced by Fox's Biscuits.. They are named after their malt  flavouring and milk  content.

The design used varies according to the manufacturer, with variants including two milk churns  and a cow and a gate or a cow and a calf.

it is a kind of soft rotary moulder biscuit.   soft dough eating quality is so different than hard dough. and their processings are so different.
