share ur experiences of cleaning oven wire mesh and too how much extent that method is effective on a product which is high in shortening/fat in recipe? what i experience is that method by heating and applying brush and then cleaning total time of about 3 to 4 hours.

we have Imaforni Lines we usually clean the wire mesh to overheat the oven for 2-3 hours before that we applied petroleum jelly on the band and then burnout. And let the wire brush beneath the band run to clean the carbon . pls pls note safety measure has to taken before doing this also the operator should have fair experience while performing this
For getting a clean bottom biscuit and longer life of oven band, daily cleaning of oven band for 30 minutes is a must.
1. Increase all zone temperature 30 deg above the running temperature.
2. Start the brush and apply pressure for 30 minutes.
3. Start dough rotation ( cleaning band with dough) from 16 th minutes till end to arrest the loose carbon particles.
During weekend shut down the above practice to be done for 1 hour or more to ensure complete cleaning.

Daily cleaning is not possible because of production continuous targets, although you are right the procedure you described is right the same way most of people do clean wiremesh. But not necessary to clean it on daily basis. if you have cleaned the wiremesh properly weekly from 2-4 hours by applying brush and heat then it give good production for a week without black carbon spots. moreover 30 mints cleaning is not ok as brush dismantle the carbon particals and when you start production it give black spots. this is my experience may be you using 30 mints according to ur products is fine it depends upon ur products may be. if brush quality and properly installed then its fine for 1 week this is i have personally observed and applied.

The use of biscuit lifting "teethed rollers" on the exit end of the oven can help stop the build up
Keep the carrier rollers & brush units clean
Also dummies wrapped with cotton / linen place on the underside after the brushes will help - but burning the band as above if the best way to loosen the carbon & brushes to remove it
