Last year, I tried a burger bun, guess it was from a company in UK, with melted cheese on the surface. Basically it is a cheese sprinkling process directly after the proofer and prior entering the oven. During baking, the cheese will melt and sink slightly below the surface, imparting a rich cheese flavor and leaving a yellowish color on the surface of the bun.
My guess it is a high melting point cheese, cannot come in block but has to be in particle size similar to sesame to disperse it properly. Anyone familiar with this process or can direct me to a cheese supplier within the Gulf region (UAE / KSA)?

they have so huge range cheese products.. some of them is special bakestable pieces.. ıf u sprinkle onto the bun, it is not burned and not melted so much. only a little melt for sticknees onto the bun. so its appearance is very nice..
