Black Carrot Colour

•Our factory in Konya, Turkey is in the heart of the growing region for Black Carrots, which means that we are perfectly placed to manage the annual crops for this incredible colour.

•With a clean label profile, this is an anthocyanin pigment that works best in pH 3 – 5.5

•In acidic applications Black Carrot produces a deep red colour, as the pH is increased the colour shifts to pinker hues then through to purples and blue at high pH. Though sadly, the blue shade will precipitate over 48 hours. Anthocyanins will not remain stable above pH6.0.

•Black Carrot has good heat stability and can even be used in bakery applications; however, it should be noted that the colour will not be red if the pH of the application is not acidic.

•Applications: Ice Cream and water ices, Confectionery, Beverages, Baked and Extruded foods, Smoothies, Fruit Preps, Jellies, Powdered Beverages, and Sports nutrition

•This is a clean label food ingredient used to replace artificial red colours such as Ponceau 4R, as well being a great Vegetarian and Vegan alternative to Carmine. There is strong consumer demand for simple, clean label and more natural ingredients on food and beverage packaging.

• Anthocyanins have long been recognised as a superfood and vital to maintaining a healthy and balanced diet. Anthocyanins are a type of flavonoid and can be found in many commonly consumed fruits and vegetables, they are responsible for the deep red, to blues, purples, and blacks seen in Berry fruits such as Blueberries and Blackcurrants. Anthocyanins have antioxidant properties and so may help to support a healthy lifestyle.

•Colour shade and intensity depends on dosage, and colour of the base material. This colour can be used as Quantum satis. Available in varying strengths, and also as a spray-dried powder.
