In the second episode of our podcast, biscuit experts Jos Vast & Jacob van Kogelenberg join us to talk about the Apple Tart cookie.

One of the things that Jos and Jacob discuss is the difference between biscuits and cookies. According to Jos, biscuits are harder and made with either a sheeting machine or a rotary molding machine. Cookies, on the other hand, are sometimes deposited or extruded.

“Apple Tart has no leavening agents since its airiness comes from putting air inside the dough” as described by Jos.

Jos and Jacob walk us through the biscuit baking process, explaining the proportions of sugar, water, and flour inside, as well as the chemical agents used, or not used, in the process. They also cover the main base, the dough, and the final, high-quality that preserves the biscuit's freshness.

In the first part of this episode, Jacob talked about the advantages of the packaging and compared it with The Marie Biscuit that they discussed in the previous episode.

“This is made on a machine that is built probably in the 1950s, there is no replacement for it,” said Jacob.

Despite the machine's age, the manufacturer has continued to use it because consumers are familiar with the packaging's traditional and beautiful design.

Jacob goes into great detail regarding the functionality of the packaging and how it is made. The machine used to package the cookies provides high-quality, standard packaging, but it is complex to use and slow, which makes it unsuitable for today's modern market. However, for the manufacturer, changing the packaging machine would be challenging since it offers excellent functionality and adds to the brand's image.

Later in the episode, Jos walks us through the challenges of the production process of The Apple Tart.

Traditionally, this type of cookie is at high risk of oxidation. However, the Apple Tart cookie solves this issue by imprinting holes in the center of the cookie to help with drainage of moisture.
