Jacob gives us an in-depth explanation of the packaging process, which involves a technique called ballooning. This involves using a machine that is purposely set up to not work as intended to create the unique shape of the packaging.
While Jacob explains that the Apple Tart package is impressive, he believes that the Belgium crunchy cookies win the argument. He also elaborates on some of the flaws in Lotus Biscoff packaging and how manufacturers can improve it.
After Jacob described the ballooning process in great detail, he opened the pack. Further elaborating that it is not actually aluminum, but a metalized material. According to Jacob, manufactures boil aluminum in a vacum chamber, that then vaporizes onto the film above, providing an extremely thin layer of aluminum.
As Mario explains in the episode, Lotus Biscoff is a very famous product worldwide, and he asked Jos to explain how this product got it’s recognition all over the world.
“The reason is, they promoted it in many parts of the world as a caramel biscuit” , Jos explained.
More so, you can find a similar kind of product with different type of spices, that give this biscuit different taste profile.
Jos, told us a story about the similarities between, say, Speculaas and Lotus cookies, and explained why Lotus is still the finest biscuit for coffee. A caramel note, a touch of cinnamon to round out the flavor, and candid sugars are just some of the components of this distinct flavor.
“We tried to replicate this flavor for many clients… but to get exactly the 100% of this flavor profile is very very difficult” , said Jos.
