Jacob, an expert in biscuit packaging, discusses the advantages of the packaging used for this product. He explains that the Thee Biscuit packaging has 20% more material compared to the Marie Biscuit, which makes it tighter and reduces crumbs.

"You need biscuit tight in the package because if they rattle, they'll rub and you'll get a lots of crumbs."

In this episode, Jos and Jacob discuss the use of different materials for packaging, such as polyester and bio-polyethylene, and when is it needed to use materials that offer oxygen barriers.

They also touch on the use of palm oil in the manufacturing process and why it's so widely used despite its negative image due to deforestation.

Jos breaks down the biscuit's ingredients and discusses the risk of oxidation with the use of palm oil. He also compares the hardness of the Tee Biscuit to the Marie Biscuit and notes that the Tee Biscuit should pass the dip test, which means it shouldn't fall apart when dipped into a beverage.

Our host, Mario, mentioned an often discussed phenomena on our website, checking. He wanted to know if it only happens with crackers, or are biscuits affected with this effect too.

“There are multiple factors that can cause checking, generally speaking the main reason is the moisture that is not being distributed well throughout the product”, explained Jos.

Additionally, When talking about checking and moisture in biscuits, Joe touches on the subject of acrylamide, and the Maillard reaction. Which are considered to be cancerogenic and new regulations are soon to be made regarding this within The European Union.

To conclude, Thee Biscuit has many similarities with Petit Beurre and The Maria Biscuit, nonetheless it’s a biscuit with it’s own identity and story behind it.
