Working in project where I have to contrive biscuits and cookies using sustainable ingredients. So I am researcher want to understand impact of different heat treaments on dough, what chemical and physical change occur how i can make good pilable biscuits and are even have same acceptance in market as conventional or wheat derived biscuits have.
